1 cups Roma plum tomatoes
2 tbsps. red onion, diced
1 large clove garlic, minced
2 tbsps. fresh chopped basil
2 tbsps. olive oil
tsp. red wine vinegar
tsp. salt
pinch ground pepper
loaf French baguette bread
tsp. garlic salt
2 to 3 sprigs Italian parsley (garnish)

Directions:
Combine tomatoes, onion, garlic and basil. Add tbsp. oil, vinegar, salt, pepper and mix well. Cover and refrigerate at least an hour. Preheat broiler and slice bread in 1" slices on 45 angle. Combine remaining oil with garlic salt. Brush entire surface of each slice of bread with olive oil mixture. Broil bread slices 1 to 2 minutes per side or until bread starts to turn brown. Pour chilled tomato mixture on bread slice. Garnish.
