1 lb. cream cheese
1 lb. Ricotta cheese
1 lb. sour cream
3 eggs
¼ lb. butter, melted and cooled
2 tsp. concentrated lemon juice
1 tsp vanilla extract
3 T. flour
3 T. cornstarch
1 c. sugar
8 graham crackers
2 T. melted butter

Directions:
Preheat oven to 350º. Mix all the cheeses together; add butter, sugar, and remaining ingredients. Blend well.
Grease a springform pan. In a food processor, pulse the graham crackers and 2 T. melted butter into fine crumbs. Coat the sides and bottom of the well-greased springform pan with the fine crumbs. Evenly pour the cheesecake batter into pan. Tap the pan a few times to allow the air bubbles to rise. This helps prevent the top from cracking. Bake 1 hr...Do not open oven door during this time. Leave the cake in oven until oven is completely cooled.
