2 ½ cups sugar
¼ can (12 ounces) shortening
1 ½ cups oil
4 eggs
9 cups flour
½ teaspoon salt
Zest of 2 oranges or zest of 3 lemons (about 1 ounces)
2 ounces orange or lemon juice
1 teaspoon vanilla
1 egg white
1 teaspoon water

Directions:
Directions:
Cream shortening and sugar. Add oil and eggs, blending well. Mix in flour, salt, zest, juice, and vanilla. Dough should be on the stiff side. Cover mixing bowl and chill in refrigerator for at least 2 hours to 2 days.

On a lightly floured board, roll dough out into about ¼-inch thick. Cut with cookie cutters. Place on cookie sheets lined with parchment paper (or grease cookie sheet). Mix egg white with water. Brush egg wash on cookies. Top with cinnamon sugar, sugar-nut mixture, or colored sugar.

Bake at 350°F for 10 to 15 minutes until edges just begin to brown.
