3 cups frozen hash brown potatoes
¾ cup Monterey Jack cheese, shredded
1 cup fully cooked ham, cubed
¼ cup green onions, chopped
4 eggs, beaten
1 - 12oz. can evaporated milk
¼ tsp. pepper
⅛ tsp. salt

Directions:
Directions:
Place potatoes in an 8" square baking dish. Sprinkle with cheese, ham and onions. Whisk eggs, milk, pepper and salt; pour over all. Cover dish and refrigerate for several hours. Remove from refrigerator 30 minutes before baking. Preheat oven to 350ºF. Bake uncovered, 55-60 minutes.
