2½ lb. beef eye of round roast
1 tsp. vegetable oil
1 medium onion, chopped
1 cup brewed coffee
1 cup cold water. divided
1 tsp. beef bouillon granules
2 tsps. dried basil
1 tsp. rosemary, crushed
1 garlic clove, minced
1 tsp. salt
½ tsp. pepper
¼ cup all purpose flour

Directions:
Directions:
In a Dutch oven, brown roast in oil on all sides. Add onion and cook until tender. Add coffee, ¾ cup water and bouillon to pan. Combine basil, rosemary, garlic, salt and pepper; sprinkle over roast. Bring to a boil, reduce heat; cover and simmer 2½ hour until meat is tender. Remove roast, let stand 10 minutes before slicing. Combine flour and remaining water until smooth; stir into pan juices. Bring to a boil stirring until thickened.
