8 cups raw potatoes
6 slices bacon
2 large onions, sliced
2 tablespoons flour
¼ to ½ cup sugar
Salt
¼ teaspoon pepper
1 cup water
½ cup apple cider or white wine vinegar
½ to 1 teaspoon paprika

Directions:
Directions:
Start with a pot of salted, boiling water and add whole, unpeeled potatoes. Boil them until they are fully cooked through and soft (pierce one with a fork or a thin knife to test). Set the potatoes aside to dry and cool until you are able to handle them. This can also be done the night before with the potatoes left whole and unpeeled in the fridge for up to 24 hours.

Once cooked and cool enough to handle (but still hot), gently peel the potatoes and then thinly slice them directly into the bowl.

In a large skillet over medium heat, cook bacon until crispy, about 8 minutes. Transfer bacon to a paper towel-lined plate to drain. Crumble when cooled.

Add onion and cook over medium heat in bacon fat until light and golden brown. Blend in flour. Add in sugar, salt, pepper, paprika, vinegar, and water. Bring mixture to a simmer, cook until clear, stirring constantly.

Pour mixture over potatoes; cover and let stand. Top with reserved bacon to serve.
