1 round bone arm chuck roast or boneless round roast- cut 2 inches thick
2 tsp unseasoned meat tenderizer
2 Tbl instant minced onion
2 tsp thyme
1 tsp marjoram
1 bay leaf, crushed
1 cup wine vinegar
½ cup olive oil or salad oil
3 Tbl lemon juice
¼ cup peppercorns or coarse pepper (2 tablespoons)

Sprinkle meat evenly on both sides with meat tenderizer- pierce deeply all over with a fork. Place in a shallow baking pan.

Mix instant onion, thyme, marjoram, bay leaf, vinegar, olive oil or salad oil, lemon juice in a small bowl and pour over and around meat.

Let stand at room temperature 1-2 hours. Turn every half hour.

When ready to grill, remove meat, pound half the pepper in each side.

Grill 6 inches over hot coals- grill 20-25 minutes on each side.
