3 medium beets
¼ cup fresh orange juice
1½ tsp. finely grated orange zest
1½ tsp honey
1½ tsp balsamic vinegar
1 tsp Dijon mustard or gravelbourg french mustard
½ tsp olive oil
salt and freshly ground pepper
4 cups mixed salad greens, such as arugala mesclun, radicchio
½ cup sliced red onion

Directions:
Directions:
Preheat oven to 350 degrees
wrap beets in foil and roast for 1¼ hours . let cool. Peel and cut in a ¼ inch
dice.

In a bowl whisk together juice, zest, honey, vinegar, mustard and oil. season with salt and pepper.
Add beets and toss to coat.

Arrange greens on plate and top with the beets and red onion.
