1 package dry yeast
2 t. warm water (105º to 115º)
2 cups buttermilk
5 cups all-purpose flour
¼ cup sugar
1 t. baking powder
1 t. baking soda
1 t. salt
1 cup shortening

Directions:
Directions:
Combine yeast and warm water in a small bowl and let stand 5 minutes or until bubbly.
Add buttermilk to yeast mixture and set aside.
Sift together all dry ingredients in a large bowl.
Cut in shortening until mixture resembles coarse crumbs.
Add buttermilk mixture, mixing with a fork until dry ingredients are moistened.
Cover with plastic wrap and refrigerate for 2 hours or up to a week.
Turn dough out on a floured surface, and knead lightly about 3-4 times.
Preheat oven to 400º.
Roll dough to ½ inch thickness; cut into rounds with a 2-inch cutter, and place on lightly greased baking sheet.
Bake at 400º for 10 to 12 minutes.

Angel Biscuits are a cross between a biscuit and a yeast roll. Whenever my family and I travelled to North Carolina to visit my Mother, and when we left to return home... we always had a supply of Angel Biscuits to eat on the road back to Indianapolis. Mother added ham or sausage inside the Angel Biscuits. The best ever.
