2 cups all-purpose flour
1 cup sugar
1½ t. baking powder
1 t. salt
½ t. baking soda
¾ cup orange juice
1 t. grated orange peel
2 t. margarine,melted
1 well-beaten egg
1 ½ cups fresh or frozen cranberries, coarsely chopped
½ cup chopped nuts

Directions:

Preheat oven to 350º
In a bowl, mix together all dry ingredients with a wisk.
Stir together the orange juice, orange peel, shortening and egg. Mix until well-blended.
Combine the two mixtures folding gently. The batter may be lumpy.
Fold in the cranberries and nuts.
Turn into a greased 9 x 5 inch loaf pan.
Bake in a 350º oven for 55 minutes or until a toothpick inserted in the center comes out clean.
Cool on a rack for 15 minutes and remove from pan and enjoy.
