1 pizza dough
1/2 chicken breast
1 oz tequila
1 tsp BBQ rub (I like Dizzy Pig)
1/2 cup red onion, sliced thin
1/4 cup cilantro, shredded
1 cup Smoked Gouda cheese, shredded
1 cup sharp cheese cheese, shredded
1/4 cup Parmesan cheese, graded
1/2 cup Barbecue sauce (I use Sweet Baby Rays)

Let pizza dough rise for 1-2 hours. Mix cheese together and set aside.

Cut chicken breast into thin slices about 1 1/2 inches long. Toss with BBS rub and heated cast iron pan (medium high heat). Add tequila and cook until done.

Preheat grill on high. Have all of your toppings on a tray close to the grill. Open grill top and stretch dough as large as you can make it. Close top for 1 minute or until the dough bottom is slightly brown.

Flip dough and turn down heat. Add BBQ sauce, chicken, red onion, cilantro then cheese(in that order) to cover dough. Close top until cheese has melted and bottom is slightly brown. Transfer to cutting board and serve immediately.
