1 small watermelon
3 c apple cider vinegar
3 c water
2 c sugar
8 tbsp Kosher salt
8 tsp coriander seeds
2 tsp black peppercorns
1 tsp red pepper flakes

4 quart jars with lids

Directions:
Directions:
Trim the green skin off the watermelon and cut into 4 pieces. Remove all but 1/4 inch red fruit from the rind.
Cut the rind into 1/2 inch pieces.
Pack the pieces into 4 quart jars

Combine all of the other ingredients into a saucepan and bring to a boil stirring to dissolve the sugar.
Pour over the rind evenly in the 4 jars; let cool.
Cover and refrigerate at least 4 hours and up to 1 week.
