None inch pie shell
sugar 1¼ C.
Cornstarch 7 tbsp.
Salt ¼ tsp,’
boiling water 2¼ C.
Egg yolks 3
butter 2 tbsp.
Grated lemon rind 1 tbsp.
Lemon juice ⅓ c.
egg whites 3sugar 6 tbsp.




Directions:

Combine sugar, cornstarch and salt in a sauce pan. Slowly stir in boiling water. Cook on High until boiling stirring constantly, then switch to low and cook 5 minutes. Stir half of mixture into slightly beaten egg yolks then add to remaining mixture in saucepan and cook 2 minutes, stir continually. Remove from heat. Add butter, lemon rind, lemon juice, and blend well: cool. Pour into baked pie shell. Top with meringue made by beating egg whites until stiff enough to stand up in moist peaks. Then gradually add remaining sugar, beating continually until well blended. Pile lightly on top of pie. Bake in 325º oven for about 15 minutes.
