290g Bread Flour
40g Cake Flour
6g Yeast
240g Milk, warmed
28g Sugar

1 Tbsp. Olive Oil

FILLING:
2 Egg Yolks
45-50g Sugar
35-40g Salted Butter, room temp
58-60g Desiccated Coconut


GLAZE:
2 Tbsp. Golden Syrup
1 Tbsp. Hot Water
***Mix well and set aside when ready to use

Proof yeast (add yeast and sugar with warm milk and let sit for 5 min.). Place flours & yeast mixture into bowl and mix until well combined.Knead for 30 minutes. Add oil then continue to knead
Let rise for 30 min., then divide dough into 35-25g pieces (depending on how big you want the buns)
Roll out dough with roller and spread filling onto dough. Roll up dough and pinch ends and corners. Let rise for 30 min., to 1 hour until double or triple the size.
Bake at 350ºF for 30 min., or until golden brown.
Brush crust with sugar water or melted butter in the middle of baking and sprinkle with some coconut on top
