Marinade --
1 qt. water ... 1/3 cup kosher salt ... 1/2 cup sugar
1 pint cherry tomatoes... 3 habanero peppers.. .4 cloves garlic
4-6 bone in chicken breast w/skin
Seasoning --
1/2 tsp. thyme ... 1 T. oil
1/4 tsp. each cumin, black pepper, cayenne pepper
Topping --
Sweet chili sauce or red pepper jelly

Heat water, salt and sugar till dissolved. Cool to room temperature. Puree the tomatoes, habanero and garlic in blender. Add to cooled water mixture. Score chicken breast skin 2-3 times. Put all ingredients in a large container with lid and allow to marinate overnight!!!
To cook - remove chicken to pan lined paper towels and drain and pat dry. Brush the seasonings mixture on both sides of chicken to grill. Cook on high till skin has grill marks and a bit crispy. Then move to indirect heat till done. Brush sweet chili sauce or red pepper jelly over cooked chicken and serve.

This is the BOMB!!! It has a few easy steps to make but well worth the extra effort. You might think the 3 habanero peppers might be too much but no worries. Try this recipe -- you will be happy you did -- guaranteed!!
