2 eggs ... 1/3 cup BBQ sauce
2 cloves garlic, minced ... salt and pepper
3-4 chopped chipotle chilies with 3 T. of adobe sauce
1/2 tsp. celery salt & cumin, each
1 T. Worcestershire sauce ... 1 cup chopped onion
1/2 cup dry oatmeal ... 2 lbs. cooked ground hamburger
BBQ sauce for top of loaf

Preheat oven to 350º. Beat eggs in large bowl till smooth, then whisk in BBQ sauce, garlic, chilies, adobe sauce, spices and Worcestershire sauce. Mix in onion, oatmeal and beef till blended. Pack in loaf pan. Brush top with BBQ sauce. Bake for about an hour.

This is my go-to meatloaf recipe. The chipotle chilies give it that great smokey flavor. I have used this for my stuffed green peppers as well.
