¼ c. shortening
1 c. sugar
1 egg
1½ c. flour
½ t. salt
2 t. baking powder
1 T. Minute tapioca
1 T. lemon juice
2 T. butter
⅓ c. milk
2 c. cherries, sweetened

Directions:
Directions:
Preheat oven to 400º. Mix together flour, baking powder, salt and sugar. Cut shortening into dry ingredients. Beat egg and add milk. Combine with flour mixture. Stir until flour is damp. Pour cherries into greased, shallow baking dish; 9x9 inch pan, or similar. Sprinkle with tapioca, add lemon juice and butter (divided into small parts). Drop batter in 6 mounds on top of cherries. Bake for 30 minutes. Serve warm with milk or cream. Makes 6 servings.
