1 1/2 T oil
2 T Thai Red Curry Paste
1/2 C Coconut Milk
1/2 C Water
3-4 Kaffir Lime Leaves Slightly Bruised or Cilantro
8 oz Shelled de-veined Shrimp Tail on
1 C pineapple Cubes
1/2 T Fish Sauce
1/2 T Palm Sugar
Squirt of Lime Juice

Make Jasmine Rice

Heat up a pan with cooking oil. When oil is hot add curry paste to release aroma. Keep stirring, don't burn paste.
Add coconut milk, water, line leaves and bring to boil.
Add the shrimp and pineapple and cook about 5 minutes on medium low heat.
Add fish sauce, sugar, and lime juice
Stir to combine well.
Serve over rice.
