1 Lemon
Olive Oil
Salt and Pepper

Directions:
Directions:
Preheat oven 425º

Clean and peel carrots, then cut into 2-inch lengths and into thin slices.
Zest and quarter lemon
Toss prepared carrots with olive oil, salt and pepper
Roast on middle rack about 20 minutes.
Once carrots are done roasting, remove from oven and toss with lemon zest adn a large squeeze of lemon juice
