Ingredients: 3 c. flour (best to weigh it, 1 cup = 4.25 oz.) you can use all purpose or cake flour or a combination of both. 3 oz of white granulated sugar (6 T) 1 tsp salt 3 1/2 tsp baking powder
3 eggs 1 tsp of vanilla (optional) 6 T butter, melted 2.5 - 3 cups of milk depending on how thick you want the batter. You can use half regular milk and half buttermilk. If you don't have buttermilk you can use sour cream instead. Evaporated non-fat dry milk tastes really good too, (mixed with water per package directions)

Directions: Mix the dry ingredients together.
Add eggs to a large mixing bowl and lightly scramble. Add the rest of the wet ingredients.
Mix the wet and dry ingredients together gently. Leave some lumps. The batter will get tough if you over mix it.
Cook on a griddle heated to 300 - 350 degrees or in a pan on the stove on medium, medium-high heat. Add any additions to the top of the pancakes.
Flip when the bubbles have mostly stopped popping and the edges start to cook. Cook for less time on the second side unless using frozen blueberries.

Notes: Blueberries, bananas, choc chips, pineapple, all make good additions after you have put the batter on the griddle.
You can use frozen blueberries just keep them frozen but shake off any ice crystals or give them a quick rinse in a colander under cold water and shake off water.
