2 c. long grain white rice
5 c. chicken stock (divided)
2 T. vegetable oil
1 lb. smoked pork sausage, sliced
1 clove garlic, minced
1 large onion, chopped
1 stalk celery, chopped
1 medium green bell pepper, chopped
1/4 t. cayenne (or to taste)
1/4 c. chopped fresh parsley leaves (I use dried)
Kosher salt and freshly ground pepper*
1 c. chicken stock, maybe a little more

*I also use Tony Chachere Cajun seasoning

Directions:
Make the rice, in a medium saucepan combining rice and chicken stock (4 c.). Bring to a boil, reduce the heat and simmer until all the stock is absorbed into the rice, about 20 minutes.

Meanwhile, heat oil in a heavy-bottomed pan on medium-high heat. Brown the sausage. Once browned, added the garlic, onion, celery and green pepper. Cook until softened, about 5 minutes. Season with salt and pepper. Add 1 cup stock and cayenne (and cajun seasoning if using). Cook until the stock has reduced a little. Add the cooked rice and parsley and stir thoroughly. Taste and add more seasonings if needed.
