1 medium onion
½ green bell pepper
2 cups veggie-burger crumbles
1 Tbsp. soy sauce
1 can (8 oz.) tomato sauce
1 tsp. brown mustard
2 Tbsp. ketchup
1 tsp. chili powder
1 tsp. molasses or honey (optional)
Olive oil
4 burger buns or rolls for serving

1. Chop onion and bell pepper.

2. Heat oil in a large skillet. Add onion and cook, stirring frequently, until slightly softened (2-3 minutes). Add burger crumbles and cook, stirring frequently, until lightly browned (3 minutes). Add a little water if it looks dry.

3. Add soy sauce and green pepper and cook, stirring constantly, until tender (2 minutes). Add tomato sauce, mustard, ketchup, chili powder, and molasses/honey (if using) and stir until heated through and well combined (4-5 minutes). Remove from the heat and serve on buns or sandwich rolls.

A great lunch or easy dinner with a salad or fresh vegetables on the side. You can find veggie burger crumbles in the freezer section of your grocery store with other meat substitutes.
