1 lb. Lean ground beef
½ large white onion, diced
1 oz. Taco seasoning packet
14.5 oz. can of petite diced tomatoes
¾ cup frozen kernel corn
¾ cup mild cheddar cheese, shredded
1 small box Jiffy Cornbread Mix
1 egg
½ cup milk

Directions:

Preheat oven to 375°F. Grease 9” pie plate.

Brown ground beef and onion in a large skillet over medium heat until all pink is gone. Drain and return to heat.
Add taco mix, tomatoes and 3/4 cup water. Reduce heat and simmer for 10 minutes, stirring frequently. Add corn and cheese, and continue cooking for another 1-2 minutes.

Spoon mixture into greased pie plate.

In a medium bowl combine cornbread mix, egg and milk. Mix well. Spoon batter over the top of the meat mixture, covering the top completely.

Bake for 20 minutes until golden brown. Let stand 5 minutes and serve. Makes 6 nice “slices”.

This recipe is easily doubled and can be baked in a large 9 x 13 pan. Put a sheet pan on the rack below in case it bubbles over a little.

If the meat mixture seems real 'saucy', take out some of the sauce before you put it in the baking pan.
