Southwest Chicken Spaghetti Recipe

1 hen cooked til meat falls off bone
chicken broth
1 chopped onion
1 c. chopped celery
1/2 c. chopped green pepper
1 c. diced tomatoes
1 c. tomatoe sauce
1 c. rotel tomatoes with chilis
1 c. chopped pimento
1 or 2 boxes spaghetti
cheese slices

Take chicken off bone. Set aside.
Cook celery, onion, pepper, in chicken stock.
Add tomatoes, sauce, rotel, and pimemtos.
Add salt and pepper to taste..
Add chicken and cook slowly 1 hr.

Preheat oven to 350

Cook spaghetti, rinse, drain.
Bake in greased casserole(large) in layers.
Spag. meat, cheese. REPEAT

Bake 350 30 min. til cheese is bubbly.
