1 lb. boneless pork or chicken
1 egg
1/4 c. plus 2 tbsp. corn starch
1/4 c. flour
1 1/4 c. chicken broth
1/2 tsp salt
1 large green pepper sliced
1/2c carrot sliced thin
1 clove garlic
2 tbsp oil
1/2 c. sugar
1/3 c. red wine vinegar
2 tsp soy sauce
cooked white rice


Directions:

Cut pork or chicken into one inch cubes. Mix egg, 1/4 c. cornstarch, 1/4 c. flour, 1/4 c. chicken broth, and 1/2 tsp. salt. Beat until smooth. Dip meat to coat and fry in oil heated in a hot skillet, 5-6 minutes or until golden brown. Drain and keep warm in a seperate covered dish.

In a separate skillet, heat 2 tbsp. of oil, cook green pepper, carrot, 1 clove garlic until tender. Stir in 1 c. chicken broth, sugar, red wine vinegar, and soy sauce. Bring to a rapid boil for one minute. Slowly blend 1/4 c. cold water into 2 tbsp. of corn starch. Stir into the vegetable mixture. Cook and stir until thick and bubbly. Stir in meat. Serve over hot cooked rice.
