1 T. oil....1 each onion, red and green bell peppers , diced
1 can each of cream of mushroom & chicken soup
1 - 10 oz. can RoTel tomatoes w/green chilies
1 cup chicken broth....2 T. sour cream
2 tsp. cumin.... 1 tsp. chili powder
1/2 tsp. oregano.... 1/4 tsp. chipotle chili powder
1 cooked chicken, torn into shreds/chunks
8-16 ozs. shredded cheddar cheese
10 corn tortillas

Preheat oven to 350º. Heat oil in large skillet over high heat. Saute onion, peppers till warmed through. Combine this mixture into large bowl with cream soups, Rotel, chicken broth, sour cream, and spices till well combined; (Reserve 1/2 cup of this sauce) Spread a few tablespoons of the sauce in the bottom of a 9x13 baking dish. Layer with 1/2 the chicken, 1/3 of cheese, & a layer of tortillas. Place rest of chicken over tortillas then rest of sauce except reserved. Top with another 1/3 of cheese, remaining tortillas and then the reserved sauce and the remaining 1/3 of cheese. Bake for about 40 mins. then broil till golden on top.

I have used plain yogurt instead of sour cream since Darrell doesn't like it. Works fine.
