Cake:
1 1/2 cup sugar... 2 cups all purpose flour
1 tsp. baking soda... 1/2 tsp. salt
2 large eggs... 1- 20 oz. can crushed pineapple with juice
1 cup brown sugar... 1 cup chopped pecans
Icing:
1 cup evaporated milk ... 1/2 cup sugar
1/2 cup unsalted butter ...1 tsp. vanilla

Directions:

Preheat oven to 350º. Lightly grease a 9x13 baking dish with butter or Pam. In a large bowl, whisk together sugar, flour, baking soda and salt. Then mix in eggs and pineapple. Pour batter into the baking pan and top with an even layer of pecans and brown sugar. Put in oven and bake for 40-45 mins. till toothpick comes out clean. While the cake cooks, combine evaporated milk, sugar and butter in the medium saucepan over med-high heat and bring to a boil. Remove from heat and stir in vanilla then pour over hot cake. Let cake cool so it absorbs icing. Slice, serve and enjoy!

This is a fairly new recipe for me but it is moist and real good so I just had to add it to this book!
