2 1/2-3 lbs. chicken breast, cut into bite size pieces
2 tbsp. butter
1 medium onion, sliced
1 bay leaf
1/4 tsp. pepper
3 cubes chicken bouillon
3 cups water
4 carrots cut intio 1 inch pieces
4 medium potatoes cut into small pieces
flour or corn starch to thicken broth

Dumplings:
1 1/2 c flour
2 tsp. baking powder
1/2 tsp. salt
2/3 c milk
1 egg, slightly beaten
2 tbsp. oil

Directions:
Directions:
In a Dutch oven, brown chicken in hot butter. Add onion, bay leaf, pepper, bouillon, water, carrots and potatoes. Cover and simmer until vegetables are tender. Use flour or corn starch dissolved in water to thicken broth. With a tablespoon, spoon dumplings onto boiling chicken stew, cover and cook for 10-15 minutes. Break open one dumpling to verify it is cooked through.
