1 Cup Chopped Celery
1 Cup Chopped Carrot
1/2 Cup Halved Red Grapes
1/2 Cup Unsweetened Plain Coconut Yogurt
1/4 Cup Chopped Fresh Parsley
1 TB Diced Shallot
1 TB Nutritional Yeast
1 Tsp Curry Powder
1 Tsp Dijon Mustard
1 Tsp Lemon Juice
1/2 Tsp Turmeric
1/2 Tsp Paprika
1/4 Tsp Black Pepper
Sandwich Options:
4 Gluten-Free Buns
8 Slices of Gluten-Free Bread
4 Gluten-Free Wraps

Directions:

In a large bowl, combine all the prepared ingredients and mix well to coat and combine.

Chill the salad in the fridge for a few hours before serving as a side dish or sandwiches.
