2 cups diced celery
¼ cup butter
½ cup onion
2½ quarts bread cubes
1 cup butter cubed and combined with 1 cup of water. Heat until butter melts. Pour over cubes or croutons.
Add ½ tsp. salt
½ tsp.pepper
1 tsp.poultry seasoning

Cook celery and onion in ¼ cup butter until tender. Add remaining ingredients. Toss lightly. If it seems dry, add more boiling water and more butter. I like to add 1 chopped apple to keep it moist. Taste for flavor and add whatever is needed. I usually buy the flavored croutons at the grocery store.

I love dressing on the moist side. Taste your dressing for flavor before placing in a roaster and roast for about 1 hour at 300. You may add a little sage if croutons are not flavored.
