Muffin:
2c flour
1c sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2c blueberries (be generous)
2 eggs slightly beaten
1c sour cream or greek yogurt
1/2c vegetable oil
1/2 tsp vanilla

Crumb topping:
1c brown sugar
1c flour
1 stick softened butter

Muffins :
In a large bowl combine flour, sugar, baking powder, baking soda, and salt. Add berries and toss gently.
In another bowl combine eggs, sour cream, oil and vanilla. Mix well. Stir into dry ingredients just
until moistened.
Fill greased cupcake tins each 2/3 full.


Crumb topping:
Crumble ingredients together and sprinkle on top of each muffin.

Bake @400 degrees for 2-25 minutes. Let cool 5 minutes before eating.
