3 Cups old fashioned oatmeal
1/2 tsp ground cinnamon
1/8 tsp ground nutmeg
1 tsp baking powder
1/4 tsp salt
2 large eggs
1/4 cup pure maple syrup
1 cup mashed bananas (2)
1 cup milk
1/4 cup melted coconut oil
1/4 cup mini chocolate chips

Directions:

1. Preheat oven to 350º (convection).

2. In a medium bowl combine the oatmeal, cinnamon, nutmeg, baking powder and salt. Set aside.

3. Whisk 2 eggs together with the maple syrup, mashed banana and vanilla extract until combined and smooth.

4. Slowly whisk in the milk and coconut oil.

5. Pour the wet ingredients into dry ingredients. Stir until all the oats are covered and moistened.

6. Stir in chocolate chips.

7. Grease muffin pan. Divide mixture among 12 muffin tins.

Bake for 20 minutes.
