Oatmeal Cake Recipe

1 c. boiling water
1 c. oatmeal
c. butter
1 c. brown sugar
1 c. white sugar
1 t. vanilla
2 eggs
1⅓ c. flour
1 t. baking soda
t. salt
1 t. cinnamon

c. butter, softened
c. brown sugar
c. cream or 3 T. rich milk
1 c. sweetened coconut flakes
c. chopped nuts, optional

Preheat oven to 350. Pour the boiling water over the oatmeal and let stand 20 minutes. Cream together butter and sugars and mix with the oatmeal. Add eggs and vanilla and beat. Sift together flour, soda, salt and cinnamon, and add to oatmeal mixture. Bake in 9x13 inch pan for 25-30 minutes. Mix topping ingredients together and spread on top of hot cake. Broil a few minutes until slightly browned.
