Back Bacon
Eggs for each cup
Shredded Tex Mex cheese

Variations: -
1. (If no back bacon - sprinkle bacon bits over top then the cheese)
2. Put hash brown first in the muffin tins creating a nest – then the eggs, bacon bits & cheese
3. Put ham slice in bottom of muffin tin.

Spray large muffin tins. Line each cup of the muffin tin with 1 slice back bacon. Put 1 cracked egg in each cup over the back bacon. Sprinkle shredded cheese on top. Bake in oven 425º for 13 - 15 minutes.
