4 eggs
1 cup water
4 Tbsp oil
1 cup milk
2 cups flour
¼ tsp salt
1 tsp sugar (for dessert crepes only)

Directions:
Directions:
Beat eggs in large bowl until frothy. Add rest of the ingredients. Beat smooth. Cover and store in fridge overnight or at least a few hours. Add milk before cooking if too thick. Pour 2 Tbsp in greased hot crepe pan. Tip pan to swirl batter all over pan bottom. Remove when underside is lightly browned. Stack with wax paper in between each crepe. Secure in plastic bag to store. Use as needed.
