1¼ cup flour
¼ tsp salt
½ cup cold water
3 - 5 Tbsp. ice water.
Combine these ingredients to make the pastry. Wrap in plastic and refridgerate for 1 hour.

12 strips of cooked and crumbled bacon
½ cup shredded cheese (Monterrey Jack or pepper jack)
½ cup shredded cheddar cheese
⅓ cup finely chopped onion
¾ tsp salt
4 large eggs
2 cups heavy cream (whole or Half/Half will do)
¼ tsp sugar
⅛ tsp cayenne pepper

Preheat oven to 450º. On a lightly floured surface, roll dough to a ⅛ thick circle. Put in a 9 inch pie plate or quiche dish. trim edges, line shell with heavy foil. Bake 5 min. Remove foil, bake another 5 min. remove. Turn oven down to 350º. Sprinkle bacon and cheeses, onions over crust. Beat remaining ingred. Pour over the top, Bake until a knife comes out clean for 30 - 35 min. Let stand for 10 min before serving.
