3 cups frozen hash browns
¾ cups shredded Monterey Jack Pepper - or shredded Swiss cheese
1 cup cooked ham (or bacon pieces)
¼ cups green onion – well chopped
4 – 6 eggs beaten
1 can evaporated milk (or 1½ cups cottage cheese)
¼ tsp. black pepper
½ tsp. salt

Directions:
Directions:
Grease 9x13 baking dish. Put potatoes evenly on bottom, then sprinkle cheese, ham and onions over top. Combine milk, eggs & seasoning and pour over potatoes and cheese. Refrigerate overnight. Bake in 350º oven for 40 – 50 minutes.
Let rest 5 minutes before serving.
