Mexican Rice Recipe

2 TBSP of oil
1 c long grain white rice
2 chicken bouillon cubes
1/8 tsp pepper
1 1/2 tsp onion flakes
4 TBSP tomato sauce
21/2 c water

Directions:
Directions:
Pour the oil into a 8 inch skillet and add the rice. Stir to coat the rice in oil and then spread it out over the bottom of the pan. Cook over a medium heat. The rice will begin to look white and then light brown after about 3-4 minutes. Be sure to stir so that the rice does not burn.
Remove from heat and add pepper, 2 crushed bouillon cubes, onion flakes, tomato sauce, and water. Stir well until blended. Cover and simmer slowly on low heat for approximately 30 minutes.

DO NOT STIR WHILE RICE IS COOKING or it will become sticky.

The reason you "brown" the rice is to prevent from being sticky after it is cooked.

Rice can be frozen to use at a later date.
