2 lb pork loin

4 cloves minced garlic

4 T brown sugar

1 T oil

2 lbs carrots diced

2 lbs potatoes diced

1/4 c oil for veggies

salt and pepper to taste

Directions:
pre heat oven 375

1. mix 1/4 c oil, salt and pepper with veggies.

2. mix 1 T oil , br. sugar, garlic and rub all over the pork loin.

3. on lg cookie sheet place veggies around edges.

4. place pork loin in center., roast 50 mins.

5. remove from oven cover with foil let rest 10 mins. serve
