Chicken Picatta Recipe

1 pound boneless chicken breasts
1 TBSP olive oil
2/3 c chicken broth
1 TBSP lemon juice
1 TBSP capers
2 TBSP butter
salt and pepper to taste

For Noodles:
1 box Barilla Plus angel hair pasta - cooked
3 TBSP extra virgin olive oil
1 clove minced garlic
grape tomatoes cut in fourths
salt to taste
1 1/2 tsp italian seasoning
1/2 cup grated parmesan cheese

Directions:
Directions:
In a medium skillet, brown chicken in olive oil. Add chicken broth and lemon juice and simmer until chicken is cooked through. Add in butter and capers and simmer for 5-10 minutes.


As the chicken and bouillon/lemon juice mixture is simmering....

Heat olive oil in a large skillet, add garlic and sauté until golden. Add tomatoes and cooked/drained pasta and coat it well with the oil, add Italian seasoning and salt and pepper to taste. Cover and allow to warm so that flavors will blend together. Add a bit of the juice from the chicken mixture and parmesan cheese and warm to allow cheese to melt into mixture.


to serve place noodles on the plate and cover in chicken...I like to serve with plenty of the juice...

When I make spaghetti, I always place the left overs in a freezer bag and use these noodles to make this recipe.
