Chicken A La King Recipe

Gram (Ruth) Willoughby


1 pkg (about 6 oz) of fresh, sliced mushrooms

cup diced, green pepper

cup butter

cup flour

1 teaspoon salt

teaspoon pepper

1 jar (4 oz) diced pimentos

2 cups of chicken broth

2 cups light cream (half and half)

2 cups of cooked, cubed chicken

6 cups of cooked rice

Cook and stir mushrooms and green pepper in butter in large pot on the stove over medium heat for approximately 5 minutes.

Remove from heat. Stir in flour, salt and pepper. Return to stove

Cook over low heat, stirring until bubbly. Remove from heat and stir in broth and cream.

Return to stove and cook on medium heat until it boils, stirring constantly.

Add chicken and pimentos and continue to heat thru.

Serve over rice.
