1 package or 2 Tablespoons dry yeast (I prefer Red Star)
1 ½ cups lukewarm water
1 cup mashed potatoes
3 eggs
1 ½ teaspoon salt
1 cup sugar
1 cup soft butter
7 cups flour

Directions:
Directions:
Dissolve yeast in warm water. Set aside. Combine potatoes, eggs, salt, sugar and butter. I put my butter in with the hot potatoes. Blend in the flour and add dissolved yeast. Put into a greased bowl and cover with a cold, damp cloth. Refrigerate until ready to use.
Pinch off enough dough to make a dozen or so rolls. Put the remainder back in fridge and cover with cold, damp cloth. Roll the dough into the desired thickness and cut with biscuit cutter. Let rise, then bake at 350º or 375º until done.
Instead of using biscuit cutter, flour your hands and dough lightly, then pinch off size of roll desired.
