63 Pecans
2 cups sugar
2 cups white Karo
1/2 cup butter
2 cups evaporated milk
1 t vanilla
Chocolate of choice

Directions:
Directions:
First, butter 3 cookie sheets or use Silpat. Place pecan halves in three to a turtle. About 21 to a cookie sheet. Now make the caramel by boiling together sugar and Karo in a saucepan. Stirring occasionally. When syrup is very thick (245) add 1/2 cup of butter. Stir until melted. Then add evaporated milk. Stir constantly and cook on medium heat until a few drops form a firm ball (250). The mixture will be very thick and stick easily. Add vanilla. Stir thoroughly, then drop by teaspoonfuls on the pecans. When cool, ice with melted chocolate.
