4 skinless and boned chicken breasts
1/2 - 3/4 c mayonnaise
3/4 -1 c potato buds (instant potatoes)
1 - 2 Jalepeno peppers - seeded and chopped
1 - 2 Tbsp olive oil

Directions:
Directions:
Cut chicken into 1 inch chunks and coat with mayonnaise. Roll in potato flakes until all sides are covered. Use frying pan of olive oil and jalepenos on medium heat until crunchy and brown.

Ellen and I discovered jalepeno peppers in the mid 1980's and even grow some varieties of hot peppers in our garden. Because we both work I started sharing the responsibilities of cooking and have always liked to experiment with different combinations of spices or mushrooms, whatever. I put peppers in or on hamburgers, hotdishes, pizza, fish, chicken well, you get the point.
