"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Dear Mr. Civil:
We recently had dinner with a friend who is a Seattle native. He served us an appetizer that he claimed was a "Northwest favorite." I believed he called it something like Lewd and Fish. We have to admit it was like some kind of fish and certainly was lewd. We ate it but wonder if people actually eat this stuff, or was our friend trying to poison us?
---Still Tasting It

My Dear Tasting It:
Ha! The delightful dish your Seattle friend treated you to is called "lutefisk", a favorite Northwest treat. This is a dish that was introduced here by the city founders, the Johnson brothers, who discovered the dish while cleaning out the holding tank in their fishing boat in Ballard. What you ate was fish soaked in lye and salt and then left to bake in the sun for several months. Ollie and Swede would dare people to eat the stuff for an
appetizer and Swede figured it they lived through the experience, they would live through Ollie's cooking.
And yes, you were poisoned, but apparently you lived through it.
