Minestrone Soup Recipe

1 1/2 lb mild Italian sausage
2 cloves garlic - minced
2 large onions - chopped
2 16 oz cans Italian stewed tomatoes
4 c beef broth
1 1/4 c water
1 1/2 c dry red wine
1/2 tsp basil
1/4 c chopped celery
1 green bell pepper - chopped
2 medium zucchini - sliced
1 1/2 c cooked small pasta shells
1 Tbsp tomato paste
1/4 c chopped parsley
1/4 c freshly grated Parmesan cheese

In large kettle, saute sausage until cooked. Pour off fat and add garlic, onions and tomatoes. Mix. Add broth, water, red wine and basil. Cook covered 45 minutes. Add remaining ingredients and cook 15 minutes more.

This is from the Seattle Classic Cookbook - great with salad and French bread. Our family loves it. Can be stretched by adding more tomatoes, pasta and beef broth.
