8-10 russet potatoes, peeled and quartered
1 8 oz pkg softened cream cheese
1 c sour cream
1/2 c minced scallions or onion
1/2 c minced celery
1/4 c minced green pepper (optional)
1 Tbsp minced parsley
1/4 c melted margarine (butter)
1/4 tsp garlic powder
Salt to taste
1/2 tsp paprika
2 Tbsp margarine (butter)

Directions:
Cook potatoes til tender. Drain and return pan to low heat, shaking to dry potatoes. In large bowl cream together cheese and sour cream. Add hot potatoes, one at a time and continue beating at high speed until light and fluffy. On low speed add onion, butter, garlic powder, salt and pepper. Spoon into a 2 1/2 to 3 qt. baking dish. Sprinkle with paprika and dot with 2 Tbsp margarine (butter). Bake at 375º- 25 minutes or til heated through and top is golden. These can be prepared the day before and refrigerated.
