Ingredients: 2 pheasants each cut in 10 pieces 1/4 lb salt pork or bacon- 1 4 oz can drained mushrooms (fried and chopped fine with 1 6 pieces Rosemary (Spice Island) clove garlic) 1/4 tsp dry parsley 1 tsp salt 1 1/2 C water pinch white pepper 2 oz dry white wine 1/2 medium onion - diced

Directions:Dredge pheasant in flour and brown in salt pork or bacon grease. Add onion, mushrooms, rosemary, salt, parsley & pepper. Cook 5 minutes. Add wine. Cook 2-3 minutes more and then add water. Cover tightly and cook in slow oven (275º) until tender. (2-2 1/2 hrs.) Serves 6 - 8. |

Notes: (This is Howard Wong's recipe - Owner of the Capitol Cafe in Aberdeen - years ago) When we have pheasant it brings back memories of the days Howard and Ralph would take Dick and Jim along and go pheasant hunting. Ruby and Jeanne would take dinner out and we would all eat together. I think that's where Jim and Dick developed their love of hunting. This is from the 1st Westby cookbook.
