9” unbaked pastry shell
2 eggs
1 c. cooked, mashed squash
½ c. firmly packed brown sugar
2 T. flour
1 tsp. cinnamon
½ tsp. nutmeg
¼ tsp. salt
⅛ tsp. ginger
1¾ c. milk, scalded

Directions:
Directions:
Beat 1 egg white until soft peaks form. Combine in mixing bowl: 1 egg yolk, 1 whole egg, squash, brown sugar, flour, cinnamon, nutmeg, salt, and ginger. Blend well. Stir in milk. Blend in beaten egg white using low speed of rotary beater. Pour into 9” pastry shell (in a pie tin). Bake at 450º for 10 mins, then at 375º for 15-20 mins, until crust is deep golden brown and filling is set.
