Banana Bread Recipe

½ Cup yogurt, plain or any flavor
1 Cup Sugar
2 Eggs
3 Bananas, mashed
2 Cups flour
1 Tsp soda
1 Tsp vanilla

Directions:
Directions:
Prepare one regular size or two smaller bread pans-grease and dust with flour.
Cream together yogurt and sugar. Add eggs and mashed bananas. Mix well. In a separate bowl, sift flour and soda. Add the sifted dry ingredients to the creamed mixture. Add vanilla. Mix just until the dry ingredients are mixed in. Pour into bread pan or pans. Bake at 350 degrees 35 to 45 minutes, until done.


Cool in pan on baking rack for 10 minutes. Take out of pan and continue to cool until room temperature. Serve with butter, or without.


I usually serve this with fruit salad or chicken salad. I also set it out at breakfast for an alternate to toast.

This recipe came from a Mennonite cookbook. I have made a few changes. I use yogurt or Lite sour cream instead of oil. If I don't have enough yogurt, I add oil to make the 1/2 cup. If I don't have yogurt or sour cream on hand, I resort to the original 1/2 cup oil. I also added the vanilla.

Sometimes, I add the grated rind of one orange, or 1 cup chocolate chips.

I almost always buy too many bananas and they go bad before we can use all of them. As a result, I usually have loaves of banana bread in the freezer.
